Wild Beer Modus Operandi

This is the beer that started the brewery, a Wild beer, an untamed beast that thrives on the unpredictability of wild yeast and the subtlety and complexity of maturation in oak.
The final ingredient is the blending, after a significant period of ageing we blend red wine barrels and bourbon barrels together to produce a truly layered complex elixir. Red wine barrels, bourbon barrels, brettanomyces, time and blending, make this a truly unique beer.
