The recipe was developed by Axel Kiesbye, Brewmaster at Trummer Privatbrauerei, and Michael Dihlmann of Austria’s brewing organization, BierIG Österreich. The two spent many hours testing countless batches at the Obertrumer Kreativbrauerei before handing it off to Hofstetten’s own Peter Krammer, who finalized the project by bringing recipe and local raw ingredients together in one perfect beer.
The naming rights went to team member Dr Alexander Jäger, who is a Professor of Bio- and Environmental Technology at the Wels University of Applied Sciences.
We have dubbed the Sündenbock the first commercially brewed beer for students, as they were the ones who demanded it year after year. The result is nothing short of heavenly. Subtle, with clear honey notes, a hint of fresh lemon, and the oats rounding out and softening the beer. When aged a year, the beer begins to develop fine sherry notes as well!
We are quite sure this beer will only get better the longer it matures, which is why we chose to fill it in larger 0.75l bottles, which are more conducive to long aging periods.
