This beer is like a “Watschnbam” (in local folklore, the “Watschnbam” is a tree hanging full of “Watschn”, or slaps in your face), if you’re not careful, it will hit you. Indeed, be careful. You can see that from the label. And you don’t even notice the almost 8% alcohol. Maybe this is because the Extra Brut IPA was fermented twice, first using house yeast, and then champagne yeast. This gives the Watschnbam – when referring to the scale and term “extra brut” used for sparkling wine – its dry finish. But maybe it is also because of the fruity aromas. Orange, honey melon, sweet pineapple, vanilla and also spicy hops. At first there is mainly the melon. Then the full fruitiness slowly transforms into a rather light-bodied, indeed very dry beer with a long-lasting, fruity and spicy bitterness. It is only the slightly warming effect at the very end that makes you recall that the Watschnbam packs quite a punch after all.
